Kelly’s recipes:
“In the spirit of chocolate’s origins, I’ve created a tropical cocktail utilizing this beloved treat.”
Tarzan’s Love Call:
2 oz. gold rum
½ oz. chocolate liqueur (such as Trader Vic’s)
½ oz. pineapple juice
½ oz. fresh lime juice
One dash of chocolate bitters (such as Fee Brothers or the Bitter Truth)
Shake all ingredients with ice and strain into a cocktail glass.
Tropical Fruit Chocolate Pie
Coconut crust:
combine
1 ½ cups shredded coconut
2 Tbsp. melted butter
press into pie plate, bake for 15 minutes at 325 degrees or until slightly brown.
Filling:
combine in a saucepan
⅓ cup unsweetened cocoa
1¼ sugar
⅓ cup cornstarch
¼ tsp salt
Heat on medium.
Slowly add 3 cups of milk.
Bring to a boil, reduce heat to a simmer, stir for 3 minutes. Remove from heat, add
1 cup dried pineapple
1 cup dried cranberries,
or substitute favorite dried fruit, pour into cooled pie shell, refrigerate for 3 hours.
